Recipe: Asian Style Brussels Sprouts

Asian Style Brussels Sprouts
My younger daughter loves them. People were astonished in the produce store when they heard my little 4 year old asking if we could get Brussels sprouts for dinner! Brussels Sprouts contain the most Vitamin C of all the vegetables.  Vitamin C is necessary for collagen production in our bodies. Collagen keeps our skin firm and wrinkle free.

1 pound Brussels sprouts, halved (or use whole baby Brussels sprouts)
    1/2 cup chopped onion
    1/3 cup vegetable broth
    1 tablespoon olive oil
    1 tablespoon dark sesame oil
    1 tablespoon minced fresh ginger
    1 garlic clove, minced
1 tablespoon soy sauce (or gluten free soy sauce)

Heat sesame and olive oil in a large skillet over medium-low. Add onion, ginger and garlic to pan and saute for 3 minutes. Add broth and Brussels sprouts. Bring to a boil, cover and simmer about 10 minutes.  Add soy sauce then serve.
